My life is so crazy and hectic I didn’t even type this recipe in myself… I cut and pasted it from the Campbell’s Kitchen website. There are no recipes that are easier than those that are dump-a-cans. And we always have these things on hand.
(psst: my family loves this, but they will love anyone who has a none-casserole quick meal)
Beefy Cornbread Casserole
From: Campbell’s Kitchen
Prep: 10 minutes
Cook: 40 minutes
1 lb. ground beef *
1 can (about 15 oz.) red kidney beans, rinsed and drained
1 can (10 1/4 oz.) Campbell’s® Beef Gravy
1/2 cup barbecue sauce
1 box (8 1/2 oz.) corn muffin mix
PREHEAT oven to 375°F. Cook beef in skillet until browned. Add beans, gravy and barbecue sauce. Pour into 2-qt. shallow baking dish.
PREPARE corn muffin mix according to pkg. directions. Drop by spoonfuls on top of beef mixture. Bake 25 to 30 min. or until top is golden brown and mixture is bubbling.
TIP: *Or use 1 lb. bulk pork sausage.
Other quick meals we make:
We keep heads of lettuce on hand and frozen chicken to make quick meal sized salads (our children all LOVE salad; my daughter’s been known to go to McDonald’s and order just a salad)
